Morning Glory Muffins

Muffins! They make a great quick breakfast snack. Pair it with a glass of milk and a banana and everyone is happy...Unless you are 6 years old and catch your mom sneaking carrots into the mix, then no one is happy and you get the muffins to yourself!

I love this recipe!! Way back when (okay not that long ago) a friend was baking in my kitchen for my on-farm market. She is the best baker and prepared the most delicious baked goods. My family was so spoiled by her. Even better she wrote all the recipes in a binder for me. I don't often share, but when a muffin is this good I can't keep it from my friends.

I had to make just a few changes as I was low on a few things. Instead of oil I had to use butter, which is not big deal. I did one cup melted butter. It worked well for me. I kept the nuts out so I could send a muffin to school. No raisins in the pantry, I missed them in the muffin. OH and I added in bran flakes & chocolate chips because why not.

Morning Glory Muffins

Makes 12 muffins. **make a double batch, you won't be sorry!

Ingredients:

2 cups flour

1 1/4 cup sugar

2 tsp baking soda

2 tsp cinnamon

1/4 tsp salt

2 cups Carrot, shredded *I only had baby carrots on hand, so I cut them as small as possible.

1/2 cup raisins

1/2 cup nuts *left them out.

1 apple, shredded

*1/2 cup bran flakes

*1/2 cup chocolate chips.

3 eggs

1 cup veg oil

2 tsp vanilla

Preheat oven to 350ºF.

Mix dry ingredients and sugar. Stir in carrot, raisins, nuts and apples.

Whisk together eggs, oil and vanilla. Stir into flour mixture just until combined.

Bake for 20-30 minutes.

A nice cream cheese icing would be lovely with this muffin.
